apple and maple muesli

hi cuties!

I wanted to share a recipe today! one of my all time favorite breakfast/snacks ever! muesli ! I made it for breakfast yesterday, it is so delicious I could barely wait to take the photo!! this is really easy to make and I'm my opinon pretty healthy! wanna make it ?! heres my recipe !!

1 cup old fashioned oats ( I use gluten free  )

1 cup unsweetened vanilla coconut milk  ( you can use whatever kind of milk: almond, dairy, soy)

2 tsp vanilla bean paste, not extract 

1/2 green apple cut into cubes 

splash maple syrup depending on how sweet you like it

mix everything together and soak in the fridge overnight! its that easy!! you can even add cinnamon or other fruits to the mix, but I like adding it on top the next day.

Start The Week Right

Happy Monday!  

Start your week off right with a green smoothie! I love these drinks so much it makes you feel so much better after only one! A lot of people will just put one leaf of kale or spinach in there drink and call it a green drink, but I actually use a good amount because I want to feel a difference in my body, rather than having a sugar rush! Aha! So in my drinks I LOVE blueberry and banana so I always have that , I'll add kale or spinach with some apple and carrot. ( sometimes ginger!! I don't like that one too much! Ahah ) I also love to add ground chia. It's sooo good for you and I love chia in everything! I even put ground chia or ground flax on my frozen Greek yogurt instead of graham cracker crumbs! I Can't even tell the difference! So to make it a smooth , I add coconut water with pulp so there are little chunks of coconut ! Yum!! These are great for pre or post workout! My mom usually has one green drink before our SoulCycle class, it really keeps you going! Don't mistake these drinks for juices though, by juicing you strain out all the important pulp and fibers in the veggies and are only left with the sugars. Don't get me wrong, I love having power shots that are lemon and ginger so don't completely cut out juices😉.  If you have a great green drink that you love, comment below! I'd love to try it!

Crisp Skies

Hi everyone! Today was a day for errands :) It was so beautiful out today I just was so happy! Every 20 minutes or so it would start raining, but it was so nice because it was sunny out and kinda windy so it was totally tropical! Yay! El Niño is really on its way now! Finally! I went to dinner with my mom and sister, then after we went to the bookstore! I love going to the bookstore because it smells so nice with all the new pages. I got a few new cook books I can't wait to show you and I got this leather bound journal that I will write all my personal recipes in. That will toatlly help me keep track of them all ! Ahah  !! Well, I'm going to try out a new bible study tonight so I'm gonna run ! Talk later

Banana Bread

Hello everyone! This is my first post so thats exciting! I have been in the mood to bake some banana bread and finally got the chance to bake it the other day! This really is a no fail recipe! This bread is actually really light and pretty healthy for us who still want to stay in shape and enjoy a good snack :*) Give it a go ! I'll post the recipe below.

  • 3 tablespoons (45g) unsalted butter, melted
  • 3 large, ripe bananas
  • 1 large egg, lightly beaten
  • 3/4 cup (168g) sugar
  • 2 cups (280g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1 teaspoon (5g) baking powder
  • 1/2 teaspoon (3g) kosher salt

Heat the oven to 350F ( 176 c ) and lightly grease a 5-by-9 loaf pan. Peel the bananas and in a large bowl smash them with a fork. Mix in the sugar first and then the egg, once mixed add the melted butter, stir well. Sift flour, baking powder, baking soda, and salt. Fold the dry ingredients into the wet, until all the flour mixture is incorporated. Be sure to not over mix ! Pour the banana bread mixture into the baking pan. Bake for 45-55 minutes. Enjoy ;)
