apple and maple muesli

hi cuties!

I wanted to share a recipe today! one of my all time favorite breakfast/snacks ever! muesli ! I made it for breakfast yesterday, it is so delicious I could barely wait to take the photo!! this is really easy to make and I'm my opinon pretty healthy! wanna make it ?! heres my recipe !!

1 cup old fashioned oats ( I use gluten free  )

1 cup unsweetened vanilla coconut milk  ( you can use whatever kind of milk: almond, dairy, soy)

2 tsp vanilla bean paste, not extract 

1/2 green apple cut into cubes 

splash maple syrup depending on how sweet you like it

mix everything together and soak in the fridge overnight! its that easy!! you can even add cinnamon or other fruits to the mix, but I like adding it on top the next day.

Pink Panther Pitaya

Happy December 1st! So for my one of healthy snacks today, I had this incredible pitaya bowl! What I love most about these are they're  dairy free, so its made with coconut milk. It also has strawberry, banana, and mango! My favorite! Anyway, I have to go get ready! I'm going to the Kings game tonight against Vancouver. I have a feeling we're going to win! There is a USC/UCLA hockey game that starts right after the Kings game ends, really excited for that ! Go Kings Go and Fight On!

Shortbread

Hello ! Well, heres another Monday! Work work work! aha, over the weekend I made these delicious flaky shortbread cookies. I love to eat them with different kinds of jam! Even though I eat really healthy sometimes you just have to enjoy some sweet little treats every now and then. I have so many orders for the restaurant this weekend, so I have to get back in the kitchen. Maybe, tomorrow I'll have a little workout video or some pics to help you start getting your winter bod in shape ;) Talk to you later!

  • 3/4 cup (57g) butter, room temperature
  • 1/2 cup (64g)  powdered sugar 
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups ( 192g) flour 

Preheat oven to 325F (162C). Lightly grease pan. Cream butter until light. Beat in powdered sugar, then vanilla. Work in flour. Knead dough on an unfolded surface until combined. Press dough into pan. Bake for 30-35 minutes until lightly golden. Cool in pan for 10 minutes then invert. Cut into squares and serve warm.
